1. Goi Ca Trich (Herring Salad)
In the seventh and eighth lunar months, when the southwest monsoon blows, fishermen on Phu Quoc Island in southern Kien Giang Province go out into sea for the year’s biggest herring season. Soft and fresh herring fillets mixed with onion and grated coconut make for the unique herring fish salad, a Phu Quoc Island specialty.

2. Bun Quay Phu Quoc
Bun Quay is a rice noodle soup but this one tastes like no others you have tried before!
The base ingredient of this soup is indeed the same as other soups but Bun Quay’s preparation and ingredients will leave you with an unforgettable impression. Firstly the base ingredients are freshly mashed fish, shrimps, squid, chopped shallots blended into a hot broth and is eaten with a sauce made from fresh kumquat, chili, salt, sugar and pepper. No need for any marinade or oil, this dish is very simple, quite light, and very tasty.

3. Ghe Ham Ninh (Ham Ninh Crabs)
Ham Ninh crabs is one of the island's renowned specialties. Its firm, naturally sweet-scented meat can be crafted into various delicious dishes such as scrab porridge, steamed crab with beer, and crab hotpot.

4. Steamed mantis shrimp

The name in Vietnamese “Tom tit” came from its appearance which is like a centipede. The mantis shrimp is a long-length shrimp and has a translucent body. Its abdomen and carapace are segmented and for Vietnamese, it looks like a centipede. Even it has a hard shell, the meat is intensely sweet and tender. You can also suck the great broth outa its head if you want. Mantis shrimp is used as an ingredient for many dishes because of its crunchy and chewy meat, sweet and intense flavor.
